Grilled Cobb Salad

What you need:

    • 2 chicken breasts
    • 1/2 tsp. salt
    • 1/4 tsp. black pepper
    • 1/2 tsp. paprika
    • 10 to 12 asparagus spearrs
    • 1 can corn, drained
    • 1 pint cherry tomatoes, halved
    • 1 to 2 Tbsp. olive oil
    • 2 hardboiled eggs, chopped
    • 5 slices bacon, cooked and chopped
    • 1 avocado, diced
    • 1/4 cup diced red onions
    • Chopped romaine lettuce
    • Dressing of your choice

Directions:

    1. Season chicken with salt, pepper, and paprika.
    2. Grill chicken and asparagus on grill while roasting corn and tomatoes (tossed with olive oil and seasoned with salt and pepper) in the oven at 425 for about 10 minutes.
    3. Chop grilled asparagus.
    4. Serve salad with lettuce tossed with asparagus, eggs, corn, tomatoes, bacon, avocado, and red onions. Top with chicken and dressing of your choice.
