Sweet Potato Cookies

Ingredients

 -mashed potato

- confectioners powdered sugar

-peanut butter

Those are the four main ingredients in potato candy. Potato candy was made in the late 1800s because back then they didn't have sweets like cupcakes or cookies. But what they did have was potatoes and sugar. So they came up with a way to combine the two and make a sweet treat. This treat does not need to be cooked either. It just needs to be chilled for one hour in your fridge. (but the potatoes need to be cooked) They said that this candy was from Germany but there is no living proof that this is true. To make this candy you start by boiling your potatoes and cutting them into little pieces. Then you are going to drain the water and put it into a mixing bowl. Before you mix, put in your one stick of butter. Mix that until the potatoes have almost all the way dissolved. Then you're going to add your powdered sugar by adding one cup at a time. Make sure it's fully mixed into the paste before you add another. You keep on doing that until the mix almost feels moldable. (it can still be a little sticky). After you have made the dough you want to put it into your fridge for 1 hour. Once you take it back out it should be easier to mold and roll out. If it still feels really sticky you can add some more powdered sugar. Now you want to put some more powdered sugar on the matt you have and start to roll it out. Roll it out into a square/rectangle. It should be around ¼ inches thick. Once you have that down you need to get out your peanut butter and smear  it on there. You want it to be all the same amount but its okay if its a little off. Now you need to roll into a tube so start with the longest side and go in. once you have it rolled up you can start to cut it. Try to make the pieces very even. Once you have chopped up everything you're ready to serve! Put it in the freezer or fridge to keep it good.
