Sometimes information isn't lost.
Sometimes information is intentionally hidden. Sometimes we want information to be hidden, sometimes we want to gain access to protected information from others.
The video from the NSA is pretty modern, but this isn't specifically a modern thing. We have sought to protect our communications for more than a century, and others have attempted to protect their own national and military secrets long before our country even existed.
When we talk about cryptography, we are talking about hiding a message with encryption.
When we talk about encoding with binary, we're talking about changing how we store data. Both are a transformation of data, but the difference is the intent. If we are transforming the information to hide it or protect it, its encryption. If we are just transforming it so it can exist in a different medium, then its encoding.
So we are talking about protecting and securing information and communication. This is used everyday for things like emails, text messages, logging into websites or services, online payments, credit card transactions, and so on. Majority of internet connected communication today relies on cryptography.
