What does it take to improve a recipe, develop a new one or replicate a food you’ve seen or experienced?  This course is designed to show students just that.  Develop flavorful food products while working collaboratively with a team to improve recipes and develop new ones.  Ingredient function, baking science, and the effects of food processing and preparation using functional and technical ingredients.
