Holiday Mashed Potatoes

Recipe given to me over 15 years ago by a friend

Serves 8-10

This is a favorite recipe for the holidays because it can be prepared in advance!

3 pounds (12 med) potatoes, peeled, cooked and hot

8 oz. package cream cheese, room temp (I use reduced fat)

¼ cup butter

½ cup sour cream (I use reduced fat)

½ cup milk

2 eggs, slightly beaten

¼ cup chopped onion

1 tsp salt

dash of white pepper

In large mixing bowl, mash hot potatoes until smooth or use a ricer, as I do. Add cream cheese and butter in small pieces until melted. Stir in sour cream.

Add eggs and onion to milk and then add milk mixture to potatoes.

Add salt & pepper.

Stir until combined and place in greased 9” round casserole.

Refrigerate several hours or overnight.

Bake in preheated 350 oven 45 minutes or lightly browned on top.
