Impossible Spinach Quiche

You will need:

1 ten ounce package of frozen chopped spinach, thawed

2 cups (8 oz) shredded mozzarella

1 cup Baking Mix (Such as Bisquick)

1 1/2 cup water

2/3 cup non-fat dry milk powder

3 eggs

1 ounce cream cheese

1/4 tsp seasoning salt

1/2 tsp salt

1. Toss together spinach and mozzarella in a 9 inch pie pan. Set aside.

2. Soften cream cheese in microwave-safe bowl in microwave for 20 seconds on low. Add baking mix, water, milk powder, eggs, seasoning salt and salt and mix thoroughly with a whisk or spoon.

3. Pour mixture over spinach and cheese mixture.

4. You may store quiche in refrigerator until you are ready to bake it or you may bake it right away.

5. Bake quiche in 350 degree oven for 45 minutes or until knife inserted in middle comes out clean.

Serving suggestion: Serve with fresh salad and banana bread.

Variation: In place of spinach and mozzarella, substitute 2 cups finely sliced or cubed ham, 6 ounces frozen, chopped broccoli (thawed) and 1 cup shredded cheddar cheese.
