Italian Sausage & Bow Tie Pasta

Dolly's Original Recipe

1 Lb Italian Sausage cut into 1" wide pieces

1/2 bunch Fresh Asparagus cut into 1-2" pieces to equal 2 cups

2 cups sweet bell peppers chopped coarsely any color or combination

1/4 cup chopped carrots

1 clove garlic chopped finely

1 cup chopped onion

1/2 tsp. dried basil or several fresh basil leaves

8 oz. Farfalle (bow tie) Pasta for 2 large servings or 16 oz. for 4-6 servings

1 Jar Spaghetti Sauce (I used my own canned marinara sauce 1 quart) Chuck's is good leave out the meats and it would be wonderful for this recipe too...Sarrio's Spaghetti Sauce

Enough good olive oil to coat your pan

Salt & Pepper

Grated Parmesan Cheese

Fill a large stock pot 2/3 full of water add some salt bring to a boil for pasta.

In another sauce pot heat the marinara/spaghetti sauce and carrots (especially if you have home canned yours like me. Always heat good through 10 minutes for safety in home canned products.)

In large frying pan pour olive oil to coat the bottom of the pan good. Place the peppers, onions, garlic, asparagus into the pan. Add salt and pepper. Heat on medium heat for 4-5 minutes. You will want the vegetables to be crisp tender. Remove from pan

Add more olive oil if needed. Place Italian Sausage into pan and cook until browned. Drain any excess oil out of the pan.

**While sausage is cooking you can cook the pasta in the water you've been heating for about 11 minutes Al Dente. Drain and serve immediately.

Add the vegetables, basil and sauce to pan mix and heat through briefly.

Mix or serve over the pasta. Top with Parmesan Cheese if desired. Serve with fresh Italian Bread and salad if desired.
