Beef and Broccoli Stir Fry

1 Lb Beef of your choice (round, sirloin, rib-eye) sliced very thinly against the grain

1 lg. head broccoli

1 onion chopped in cubes

1 tsp. fresh ginger chopped finely

3 cloves garlic minced

1 heaping Tbs. brown sugar

1 Tbs. Soy Sauce

1 Tbs. Teriyaki Sauce

3/4 cup beef stock or water with 1/2 tsp. beef base or water with bouillon cube

1/4 cup corn starch

1 cup plain water to be used as needed

Oil of your choice for frying

Have your ingredients sliced, diced, minced before even starting to cook. Put your sliced beef in a shallow bowl. Mix together the 3/4 cup beef stock with corn starch, soy sauce, teriyaki sauce and brown sugar. Pour over the beef in the bowl, covering all if possible; Meanwhile chop onion, ginger and garlic. Wash and chop most of the stems from the broccoli and cut into smaller pieces. Heat a very small amount of oil into frying pan or wok. Cook broccoli for 1-2 minutes in oil drain and remove to another bowl set aside for now. Add more oil if needed to pan then add onions, garlic and ginger, stir frying for 1 minute; drain and place in bowl with broccoli. Using tongs remove beef from broth place in another plate reserve your beef stock mixture for use in a minute; Add oil to pan only if needed add beef 1 layer at a time let brown then turn and brown all sides quickly, drain and remove adding beef until all has browned. Have your 1 cup plain water handy. Take the beef stock mixture that you reserved in the bowl and pour it into pan stirring constantly it will thicken almost immediately. Add water as needed stirring constantly cooking to the consistency you desire. Quickly add beef and vegetables cooking through for 1-2 minutes.

Serve immediately over cooked rice or noodles.
