This is a healthy/light cool dish for the hottest days of summer! It is a great treat when the heat becomes unbearable. Blanch the beans, toss with vinaigrette and you're good to go.

Mix all ingredients except the green beans and refrigerate until ready to use.
Blanch the green beans for 7 or 8 minutes in boiling water; remove from heat. Cool down rapidly by rinsing in cold water or tossing with ice. Pat dry with a paper towel and toss with the vinaigrette. If made in advance, stand at room temperature for 30 minutes before serving.
