This recipe is very similar to the stir-fry corn they serve at Silver Dollar City. You can actually cook all the vegetables together and it tastes the same. Cooking the corn separately takes more time and the corn is chewier if it is not cooked in the oil. It’s a matter of texture preference.

Remove corn from ears by standing the ear up on a cutting board and slicing off several rows at once, “squaring off” the sides. Heat a large nonstick skillet over medium-high heat. Add corn; stir until beginning to dry and brown, about 8 minutes. Transfer to a small bowl. Add olive oil to skillet. Add bell peppers, onion, and garlic. Sauté until tender, about 8 minutes. Mix in cilantro and chili powder, then corn. Stir until heated through, about 2 minutes. Season to taste.
