2 cans black beans, drained
1 onion, chopped
2 garlic cloves, chopped
1 T or more olive oil
1-2 chicken breasts, cut into cubes
3 C chicken broth
1 C sherry cooking wine
1 can corn, drained
1 T chili powder
1 t cumin
1 bunch cilantro, minus stems, rinsed and chopped
12 C green onions, chopped
1 t salt
1/2 t white pepper or ground black pepper
1 can chopped green chilies, drained
sour cream
tortilla chips
In a deep pot, saute chicken, onion, and garlic in the olive oil until chicken turns opaque. Add broth, cilantro, and seasonings, retaining a small amount of cilantro for garnish. Simmer at least 30 minutes. Add green chilies and cook another 10 minutes. Garnish bowls with cilantro, a dollop of sour cream and tortilla chips.
