Onion Soup
This recipe is the original Famous Barr’s soup. It’s extremely satisfying, salty, and perfect when it’s chilly or when you’ve got a cold but don’t like chicken noodle soup.
Ingredients
- 1 stick/6 T sweet butter
- 4 large sweet yellow onions, chopped coarsely
- 1 T paprika
- 1 t freshly ground pepper
- 1/2 t salt
- 1/2 C flour
- 2 bay leaves (optional)
- 10 C beef broth
- French bread, cut into thick slices
- Swiss cheese
Preparation
In a large pot, melt the butter and slowly cook the onions until softened, 15-20 minutes. Add the dry ingredients and stir to make a roux. Slowly add the beef broth, stirring constantly. Cover and simmer for 30 minutes. Remove the bay leaves if used.
Ladle the soup into a broiler-resistant bowl about 3/4 full. Top with a thick slice of French bread and a slice of Swiss cheese. Broil until the bread is crusty and the cheese melts. Handle with care!
