Italian Dressing
Marinate any steak or chicken with this easy marinade! Use bottled or homemade.
Red Wine and Coffee Marinade for beef or pork
1 C brewed expresso or strong coffee, cooled to room temperature
1 C full-flavored red wine
1/2 C olive oil
4 garlic cloves, grated
2 T Dijon mustard
1 1/2 T brown sugar
1 T Worcestershire sauce
1/4 ground cinnamon
Freshly-ground black pepper
Salt to taste
Whisk all ingredients together in a glass or non-reactive container. Marinade meat 1+ hours before grilling. This marinade is enough for up to 8 steaks and keeps refrigerated for 2 days.
Spicy Mexican Marinade for steak, pork, chicken, or fish
1 7-oz can chipotles en adobo
1/2 medium white onion, coarsely chopped
1/4 C dark beer
1/4 C packed fresh cilantro
2 T fresh lime juice (1 lime)
Sea salt, to taste
1 C mayo, more as needed
In a food processor or blender, puree the chipotles and the adobo sauce until smooth. Transfer to a small bowl. In the processor, puree the onion, beer, cilantro, lime juice, and a large pinch of the salt. Transfer to a nonreactive bowl. Fold in the mayo and 1/3 to a 1/4 of the chipotle puree, to taste. (Refrigerate the remaining puree for another use; it will keep up to a month)
