Ingredients
1 1/2 - 2 pounds shrimp, deveined with shell and tail removed
Kosher salt
5 T olive oil
2 cloves garlic, chopped or sliced thinly
2 fresh red hot chiles, cored, seeded and diced
1 T finely chopped fresh or pickled ginger
2 bunches of green onions, chopped
1/4 C chopped fresh cilantro
2 T fresh lemon juice (more to taste)
Preparation
Heat a large saute pan over high heat for a minute. Season the shrimp with 1/2 t salt. Pour 2 T olive oil in the pan and then add the shrimp, garlic, chiles, and ginger.Saute about 2 minutes. Add 2 T more oil, the green onions, and 1/4 t salt. Saute about 2 minutes. Remove from the heat and add the cilantro, lemon juice and remaining oil. Season to taste. Serve over rice.
