steak tacos

Cinco de Mayo Celebration - Fresh and healthy!

Ingredients

Preparation

  • 1 lb or less sirloin steak, sliced thinly
  • 1 T lime juice
  • 2 garlic cloves, chopped
  • 1 t salt
  • ground pepper, to taste


  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1 large onion, sliced
  • 1 T cooking oil
  • 1 t cumin
  • chili powder, to taste
  • cayenne pepper, to taste
  • garlic salt, to taste
  • 1/2-3/4 C tomatoes (I used whole grape tomatoes)
  • 1/2 C shredded chihuahua cheese (or any Mexican soft cheese)
  • soft taco tortillas
  • sour cream
  • 1/2 C chopped lettuce and 1 T chopped cilantro mix

Slice the sirloin steak thinly and toss with the garlic, lime juice, salt and pepper. Refrigerate one to several hours.

Add oil to a cast iron skillet and saute all the vegetables on medium high. Once a bit softened, add the steak, its marinade, and remaining seasonings. Saute until no longer pink (5 minutes or less). Turn the stovetop off, stir in the tomatoes, and top with the cheese.

Build the tacos with the remaining ingredients.
