Chili Mac 'N Cheese

American cheese makes this soup super creamy like macaroni and cheese. It's the perfect filling soup when it's cold outside!

Ingredients

Preparation

1 lb. Italian sausage or ground chuck

2+ T olive oil

3+ garlic cloves, chopped

6-7 celery stalks, chopped

2-3 onions, chopped

1-2 T chili powder

1 t cumin

1 t salt

½ t freshly ground pepper

4 C chicken broth

2-4 large tomatoes, chopped, OR 1 can diced tomatoes, with juice

1 can white kidney beans

1 can chili beans or red beans

½ C elbow (macaroni) pasta

American cheese

Saute the meat, garlic, celery, and onions in olive oil in a large pot, stirring frequently until softened. Add seasonings, stir, and then add all the remaining ingredients except the pasta. Simmer, covered, 30 minutes or more. Add the pasta and simmer until it is al dente.

Spoon into bowls and top with American or other soft cheese.
