Dressings
Blue Cheese Dressing
3-5 oz. blue cheese, crumbled
1/2 C buttermilk
3 T sour cream
1 T lemon juice
salt and freshly ground pepper
1-2 T fresh chives, chopped
Mix all ingredients and refrigerate.
Ginger Vinaigrette
1/4 C Japanese rice vinegar
1/4 sugar or no-calorie sweetener
1 t finely-grated fresh ginger root
1 t toasted sesame seeds or chopped roasted peanuts
fresh ginger, julienned or chopped finely
Mix all ingredients and refrigerate.
Dijon Dressing
3 T red wine vinegar
1 t Dijon mustard
1 T minced shallots or green onions
1/4 t salt
1/8 t ground black pepper
1/4 C olive oil
Mix all ingredients and refrigerate.
Garlic Vinaigrette
1 garlic clove, sliced
1 t salt
3 T olive oil
1 T red wine vinegar
Crush garlic with salt using either a spoon in a bowl or a mortar pestle until it is a paste. Add oil and then vinegar. Transfer to a tightly-lidded container, shake well, and refrigerate until needed. Toss with salad 15 minutes prior to serving.
Greek Pasta Salad Vinaigrette
1/3 C red wine vinegar
2 t freshly-squeezed lemon juice
1 1/2 t minced/crushed garlic
1 t sugar
2 t dried or 2 T fresh oregano
1/2 C olive oil
Mix all ingredients and refrigerate.
