These spread recipes are awesome on cooled, grilled corn! Remember to always use high heat when grilling corn and rotate every few minutes. The kernels should get browned, shriveled, and slightly charred works, too! Recipes are for 4 ears of corn, broken in half for easy handling. Mix the spread well and let the ears cool completely to prevent excessive moisture seeping into the spread (plus keeping your hands from being burned!)
Crazy Corn - Garlic Mayonnaise Spread
1/2 C mayo (not Miracle Whip)
1 small clove of garlic, minced or grated
salt and pepper to taste
Parmesan cheese
Spread the ears with mayo mix. Roll in Parmesan cheese.
Mexican Mayonnaise Spread
1/2 C mayo, zest from 1 lime--alternative, you can purchase lime-flavored mayo sandwich spread, produced by Kraft.
1 t chili powder
cayenne pepper, to taste
Spread the ears with mayo mix. Roll in crumbled, salty cheese of choice. Goat cheese is perfect if you're a fan!
