You can substitute cooked beef (leftovers) for the chuck roast and add it at the end with the grains
Ingredients

3+T olive oil
2 lb chuck roast, cubed
2 large carrots, chopped or 1 C carrot matchsticks
2 stalks celery, chopped
1 large sweet onion, diced
3 garlic cloves, minced
1/4-1/2 C white wine
8-9 C vegetable or beef broth
3-4 T tomato paste
2 T beef concentrate
Kosher and ground pepper to taste (at least a teaspoon of salt)
3/4 C grain of choice (Trader Joe's Harvest Grains is recommended)
Saute the meat, garlic, celery, and onions in olive oil in a large pot, stirring frequently until softened. Add the white wine, stir, and then add all the remaining ingredients except the grains.
Simmer, covered, 30 minutes or more. Add the grain and simmer until it is al dente, about 10 minutes.
