Italian Soup

1-2 T olive oil

1 onion, chopped

½ lb Italian sausage

3 stalks celery, chopped

2 garlic cloves, chopped

1 cup carrots, chopped

1 or 2 cans diced tomatoes

1 cup elbow macaroni or other small pasta

optional: cabbage or other vegetables

Saute onion, sausage, celery, and garlic in the olive oil, breaking up the sausage as you cook. When browned, add tomatoes and carrots and 4 or more cups of water. You may also add other vegetables. Simmer, covered, for 45 minutes or until vegetables are tender. Add macaroni the last 10 minutes of cooking time. Serve with real grated Parmesan cheese.
