Baked LIme chicken

This chicken dish is so tender it almost doesn't need a knife!

The lime and brown sugar garnish are the perfect subtle amount of flavoring. Pair this dish with your favorite tropical side dish, such as pineapple or coconut rice.

  • 6 boneless chicken breasts, skinned

  • 1 large lime

  • 1/3 C flour

  • 1 1/2 t salt

  • 1 T paprika

  • 1/4 C cooking oil

  • 2 T brown sugar

  • 1/2 C white wine

  • 1/2 C chicken broth

Preheat oven to 375 degrees. Prepare a heavy skillet that can go from stovetop to oven and has a tight lid.

Grate the entire lime of its zest and set the zest aside in a small bowl. Place the chicken in a bowl large enough to contain all the pieces and squeeze the lime's juice over the chicken to coat it.

In a gallon-size plastic bag mix the flour, salt, and paprika. Add the chicken to the bag and toss to coat.

Heat the oil to shimmering (med-high) heat. Add the chicken and brown both sides but do not cook completely through. Drain the oil and add the wine and chicken broth. Mix the brown sugar and lime zest and top each breast with the mixture. Cover and bake for 45 minutes.
