Spanish Fish

Ingredients

Preparation

  • 1 green bell pepper, chopped

  • 1 large sweet onion, chopped

  • 1 C chopped dense leafy greens, like spinach or chard (optional)

  • 2 T oil (light olive is best)

  • 1/2 C white wine

  • 15 oz tomato sauce

  • 1 t garlic salt

  • 1/2 t (or more) oregano, basil, or Italian herb mix

  • 1/2 t (or more) hot pepper sauce

  • 4-6 boneless fish fillets

Saute the bell pepper and onion (and greens, if using them) in the oil in a large pan on medium-high heat. Add remaining ingredients except the fish and simmer uncovered for 10 minutes. Add the fish and cover the pan. Simmer for 20 minutes or until fish flakes and is done throughout.

Serve with rice as a side to use up the extra sauce.

Some flavor options would be to substitute Worcestershire or soy sauce for the hot pepper sauce
