Dog Gone Good Thanksgiving Pumpkin Treats

Makes approximately 5 - 6 dozen treats depending on size of cookie cutter. They freeze well too.

Ingredients

1/2 cup unsweetened applesauce

1 egg

1/2 cup pure pumpkin

1 teaspoon vanilla

1/2 teaspoon cinnamon

1 1/4 cups water

4 cups whole-wheat flour

1/2 cup cornmeal

3/4 cup quick cook oats, *set aside ¼ cup

Directions

Preheat oven to 350 degrees.

In a large mixing bowl, combine applesauce, egg, pumpkin, vanilla & water.

In a second bowl, combine flour, cornmeal, cinnamon *and 1/2 cup oats.

Add dry to wet ingredients and mix well. (I used the food processor to pulse everything together since the 5 cups of dry ingredients makes this challenging to mix.)

Turn dough onto floured surface and knead. *Sprinkle reserved ¼ cup oats on top of dough and roll out to ¼ inch thick and cut into shapes. Reroll scraps and repeat.

Place on parchment or greased cookie sheet and bake 25 minutes - 35 minutes, according to the size and your oven. Watch and remove when slightly browned. Cool on a rack and store in sealed container.

*You can mix the entire ¾ cup of oats in at once with the other dry ingredients if you prefer.
