Freedom Fries: Guilt-Free Oven Crisp Egg White Fries

Ingredients

4 or 5 medium russet potatoes, peeled and cut lengthwise into ½ inch potato sticks

2 egg whites

Coarse salt and freshly ground pepper or preferred seasoning to taste

Olive oil or canola cooking spray

Directions

Peel and cut potatoes. Soak in ice water for 30 minutes to 2 hours to remove excess starch and prevent fries from overbrowning. (I soaked mine 2 hours.) Drain potatoes and pat dry with a kitchen towel.

Heat oven to 425°F. Line two large rimmed baking sheets with parchment. Whisk egg whites in medium bowl until frothy with seasoning of choice. Add the fries; toss to coat in seasoned egg white mixture.

Place fries onto parchment lined baking sheet, spreading out and not touching. This allows the fries to bake and not steam and to crisp. Spray with cooking spray and sprinkle with additional seasoning if needed. Bake 30 minutes or until golden and tender, turning once or twice, spraying and adding additional seasoning if needed.
