You don’t need any oil for this recipe, since the maple syrup, pumpkin and applesauce bind the oats together.
Ingredients
3 1/2 cup oats
2 cups nuts (I used ½ cup each of pecans, walnuts, pumpkin seeds/pepitas, and silvered almonds)
½ of a 15 oz can pumpkin puree
1/4 cup maple syrup
1 (3.9 oz) container of unsweetened applesauce (or ½ cup)
3/4 cup brown sugar
1 tsp vanilla
1 Tbsp pumpkin pie spice
1/2 tsp cinnamon
1/4 tsp nutmeg
1 to 2 cups dried fruit (raisins or dried cranberries, I used 2 cups cranberries)
Directions
Preheat oven to 300 degrees F.
In large bowl combine oats and nuts.
In a small bowl, combine pumpkin, maple syrup, applesauce, vanilla, sugar, pumpkin pie spice, cinnamon, and nutmeg.
Whisk to combine, breaking up pumpkin. Add the wet mixture to the dry ingredients and stir to coat.
Line 2 baking sheets with parchment or spray with cooking spray and spread granola mixture evenly onto pans.
Bake granola for 30 – 45 minutes, (45 minutes for me) stirring in 10 to 15 minute intervals to allow the ingredients to cook evenly.
Remove from oven and cool.
Stir in dried fruit and store in airtight container.
