You can use tracker to examine the maxima and minima of the interference pattern:
Make sure you take you photos with a ruler in the shot so you can use the ruler tool for size.
Drag you photo into Tracker and select the line profile tool.
Click and drag the line profile across the image. You will see the typical interference patter profile showing peaks and troughs for the maxima and minima.
Maximise this graph and use your mouse on the image to determent the distance between consecutive troughs. Average this data. and repeat for each image.
