Vegetarian Tacos
Ingredients:
1 Tbsp. Olive Oil
1 small sweet yellow onion, diced
1 large stalk celery, diced
1 red or green bell pepper, diced
1 jalapeno, seeded and pithed, minced (OR equivalent amount of minced poblano pepper)
1-2 garlic cloves, minced
Juice of two limes
1 (19oz) can black beans, drained
1-2 C. corn (if frozen, let defrost and drain)
3-5 Tbsp. of your favorite salsa
1/2 tsp. Cumin
1 Tsp. Chili powder
pinch of kosher salt
pinch of fresh ground pepper
3/4 C. chopped fresh Cilantro
ADDITIONAL:
Crunch or soft taco shells
shredded cheese
shredded lettuce
chopped tomato
chopped onion
chopped avocado
chopped black olives
sour cream
guacamole
etc...
DIRECTIONS:
Heat oil in a large saute pan over med-high heat. Add onion, celery, bell pepper, jalapeno and garlic. Saute 2-4 minutes or until softened a little. Add lime juice, beans, corn, salsa and seasonings. Reduce heat to med-low and hal cover. Cook 5-10 minutes or until beans and corn are heated through and flavors are blended. Just before serving, stir in chopped cilantro.
Serve in shells or on tortillas with your favorite toppings! Make some of my Mammo's rice to go alongside!
