Hearty Italian style One Pot Meal

Serves: 6

This dish is easily adaptable to a variety of meat and vegetable choices.

*"Protein Options" - If you don't prefer beef, you can easily substitute ground pork, turkey, turkey breast, or ground chicken.

*"Veggie Options" - Consider changing up the vegetables to meet what you have on hand. Think green beans, carrots, broccoli, bottled roasted bell peppers, or a couple of handfuls of shredded cabbage.

Ingredients:

2 Tbsp. high heat avocado oil (divided)

4 C. fresh Cauliflower florets,broken into bite size pieces

1/2 a small sweet yellow onion, diced

1/2 a large green bell pepper, diced

2 celery stalks (with leaves), finely chopped

1 lb. lean (90/10) ground beef (grass fed/finished beef is my top choice) ** (see notes for other "protein" options)

3/4 tsp. sea salt

1/4 tsp. fresh ground pepper

1/3 c. red wine (I like sweet red, but a bolder red will work nicely!)

1 Tbsp. red wine vinegar

1 10 oz bag frozen peas

2-3 garlic cloves, minced

1 15 oz can Cannelloni Beans or other white bean (I prefer Borlotti beans from Jovial Foods)

1 14.5 oz can fire roasted diced tomatoes (my favorite are Muir Glen)

2 Tbsp. tomato paste

1 tsp. dried rosemary

1/2 tsp. dried thyme

1 tsp. dried basil

OPTIONAL - 1/4 tsp. ground red pepper

1/2 c. freshly shredded Parmesan or Asiago cheese

Method:

In a large skillet, heat 1 Tbsp. avocado oil over med-high heat. Add cauliflower florets and stir to coat and allow them to lightly brown on all sides. Stir in onion, bell pepper, celery, beef (or other meat option), salt and pepper. Stir to combine. Cook, stirring occasionally until meat is browned and cooked through; reducing heat slightly to prevent over browning. To the meat mixture, add the red wine, red wine vinegar, and frozen peas, stir to combine. Cover pan with lid and reduce heat to medium, allow to cook 5-10 minutes or until peas defrosted and beginning to heat through.

Add garlic,beans, tomatoes, tomato paste, and remaining seasonings; do not add the cheese at this time. Stir to combine and taste to check seasonings, adjust as desired. Reduce heat to medium-low and sprinkle the cheese in a little at a time, stirring to fully incorporate before adding more. Once cheese is melted and fully incorporated you are ready to serve! Enjoy!
