Serves 4
Use your favorite Low Carb Buns for these sandwiches, or simply throw it all on top of a salad! I love these hamburger buns from gnom gnom, and that's why I used here.
For this recipe, you'll need one large cast iron pan or skillet and you'll also be using your broiler (I use my toaster oven to save on heating up the house).
You'll be using the top and bottom half of the buns as their own "bun" for two mini sandwiches per serving. :)
You'll Need:
Ghee and/or Avocado Oil
2 boneless, skinless chicken breast halves, cut into bite size pieces
1 tsp. kosher salt
1/4 tsp. fresh ground pepper
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. thyme
1/2 tsp. dried oregano
1 tsp. dried basil
1/2 a green bell pepper, diced
1/2 a red, yellow OR orange bell pepper, diced
1 small sweet yellow onion, diced
1 minced garlic clove
2 slices of provolone cheese, cut in half
Mayo (optional) - I love this one by Primal Kitchen
2 Low carb hamburger buns, split
Method:
Mix up all your spices in a small bowl.
Lay your buns, cut side up, on a broiler safe pan and set aside.
Spread your chopped up chicken pieces in an even layer on your cutting board or large plate. Sprinkle half of the spice mixture over the chicken. Pat it down, using a spatula, flip it all over and sprinkle with remaining seasoning, set aside.
Heat a little Avocado Oil and/or Ghee (I use both for flavor) in your cast iron skillet over med-high heat. Once it's nice and hot, ad your chicken, allowing it to slightly brown before stirring it. Stir often to get it nice and evenly browned, breaking it up and allowing it to gently cook all the way through. Once chicken is nicely browned and tender, push it all to one side of the pan.
Turn on your broiler and put your buns in under the flame. Allow to broil just 1-2 minutes, until barely dry. Remove from broiler and set aside.
While buns are broiling, add your bell peppers, onion and garlic to the empty side of the pan.. Saute until onions are opaque and peppers are just slightly softened. Stir chicken into bell pepper mixture and allow the moisture evaporate while on med-high. Once juices have cooked off, remove from heat.
If desired, spread a light layer of mayo on cut side of buns. Top each bun with about 1/3 C. chicken mixture, then top with a 1/2 slice of provolone. Place under the broiler just until cheese is melted. Enjoy! :)
