Almost Southern Slaw


1/2 head purple cabbage (semi-finely shredded)

1/2 head green cabbage (semi-finely shredded)

2 medium sized carrots, peeled and shredded

1/2 red bell pepper, thinly sliced (green works too!)

3 Tbsp. red onion, very thinly sliced, then quartered

1/2 C. mayo (I use an olive oil based)

1/2 C. greek yogurt (I use organic)

2 Tbsp. Cider Vinegar (or favorite vinegar)

3 Tbsp. Coconut Sugar (or any sweetener)

1/2 tsp. salt (I use Himalayan Pink)

1/4 freshly ground pepper

In a large bowl, stir together cabbage, carrot, pepper and onion.

In a small bowl, mix Mayo through pepper. Stir with a whisk to combine well. Pour over cabbage mixture and stir well to combine. Chill for at least an hour to blend flavors. Overnight is great too!
