Low Carb Victoria Sponge Cake

Vanilla Cake with Strawberry Chia Jam filling and Silky Vanilla cream Cheese Buttercream.

here are the changes I made to this recipe...

I used vanilla whey protein and upped to 1/3 C.

I used Lakanto Classic Monkfruit/erythritol sweetener instead of swerve

1 upped the vanilla extract to 2 tsp.

I added the following ingredients: 1/4 tsp. baking soda, 1 tsp. organic stevia powder, 1 Tbsp. heavy whipping cream (to the almond milk), 1 Tbsp. gelatin powder, 1 tsp. xantham gum.

For the frosting, I used this recipe, the only alteration was that I added 1-2 Tbsp. heavy whipping cream near the end of the whipping time.

For the Chia Jam - I used this recipe, but I used strawberries and I finely ground my chia seeds first... I'm NOT a fan of seeds in my teeth. đź“·;)
