Meatballs

1 cup Italian seasoned breadcrumbs (or 3 slices wheat toasted, crumbled and 1 tsp. Italian Seasoning)

1/2 shredded Parmesan cheese (I have also used Mexican mix shredded cheese)

1/4 dried parsley

2 Tbsp. water

1 Tbsp. Extra Virgin Olive Oil

1 tsp. dried basil

1 tsp. black pepper

1/2 lb. LEAN (94/6) ground beef

1/2 ground WHITE turkey

1 large egg

Preheat oven to 375, and cover a large cookie sheet (I like the huge flat one with no edges), in parchment paper (easy cleanup). Mix all ingredients gently together in a bowl (over-mixing creates tough meat), and form into 1 inch balls using finger tips, don't mash them hard together, keep them tender! :)

Place on the baking sheet and bake for 20 minutes. Remove from oven and let cool just a few minutes before handling. Yum!
