Mediterranean Beef and Cabbage

This dish comes together super quickly and is so full of flavor.  Since it incorporates your protein and veggies all in one dish, there is no need to serve with anything else!  It's great for using up any leftover veggies you may want to add as well.


Ingredients:

Extra Virgin Olive Oil
1 small sweet yellow onion, thin sliced or diced
1 lb. lean ground beef
1 cup chopped red bell pepper or other veggies of your choosing (carrots or celery would be good)
1  head of cabbage chopped fine or chunky
3-4  cloves of garlic, minced
1 - 14.5 can fire roasted diced tomatoes (with juice)
Mediterranean  herbs (approximately 1/2 - 1 tsp each, vary per your tastes)  - coriander, marjoram, thyme, oregano, basil
1/8 - 1/4 tsp. ground red pepper (per your spice meter)
fresh ground salt and pepper as needed

Directions:

Heat a little olive oil over medium heat, add onions and saute until nice and gently golden, add in ground beef, stirring to crumble, sprinkle with salt, pepper and herbs.  Allow it to brown nicely and stir to cook through.  Add in bell peppers, saute a few minutes to soften.  Add in cabbage, stir well.  Increase heat slightly to get some nice browning on the cabbage, once it begins to get a little carmelization, stir it and allow to sit a few more minutes to brown a bit more.  Stir in the garlic, saute 2-3 minutes, then add tomatoes, stir and reduce heat to medium-low.  Simmer, stirring every now and again for a few minutes, or until cabbage is soft and water is nearly evaporated.  Taste and adjust seasonings.  Enjoy!
