Perfect Keto Berry Jam

2 C. frozen berries (I used 1 C. blueberries and 1 cup mixed strawberry/blackberry)

2 tsp. lemon juice

splash water

2 Tbsp. powdered Monkfruit sweetener

15 drops liquid stevia (sweetleaf)

1 tsp. arrowroot powder

2 Tbsp. finely ground chia seeds

In a medium saucepan, combine berries, lemon juice and water over medium heat. Once berries begin to bubble slightly, begin mashing with a potato masher to desired consistency.

Stir in sweeteners and arrowroot powder and continue to cook down to desired thickness (probably about 5-10 minutes on medium low heat). Remove from heat and stir in finely ground chia seeds.

I like this jam with little bits of berries in it, however if you want a totally smooth jam, you can cool it slightly then pour into a blender to process smooth.
