Chipotle Chicken over Brown Rice

Hot cooked Organic Brown Basmati Rice

4 Boneless/Skinless Chicken Breast halves

2 tsp Butter

2 tsp Extra Virgin Olive Oil

1-8oz can seasoned Tomato Sauce (such as basil, garlic, oregano)

1-16oz jar of Newmans Own Medium Salsa

1 1/2 Tbsp Adobo Sauce

3 tsp minced Chipotle Chilies

1/2 of an 8oz block of 1/3 less fat cream cheese

In a food processor or blender, process sauce, salsa, adobo sauce, chilies and cream cheese, set aside. Heat a skillet over med-high heat, add butter and olive oil and heat until butter is melted. Add chicken to skillet and brown on both sides. Pour Salsa sauce over chicken, cover. Shake pan gently in a horizontal fashion to distribute sauce. Reduce heat to a simmer and cover. Simmer 20-25 minutes or until chicken is cooked through and tender.

Serve chicken on top of a bed of rice and top with some sauce. Serve with a simple side salad and you have a complete meal!
