For Egg Rolls:
3-4 good size carrots, finely chopped
3-4 good size celery ribs; finely chopped (NOTE: Broccoli stems, peeled and chopped work as a great stand-in!!)
1 small-med sized head of cabbage; shredded (I like purple)
1 small onion; diced or thin sliced
About 1 tsp fresh minced ginger (just eyeball this, don’t worry about the measurement that much)
2-3 minced garlic cloves
1 lb. ground turkey (I use breast meat)
1/2 tsp. fresh ground black pepper
2-3 Tbsp. low sodium Organic Soy Sauce or Tamari, or coconut Aminos
2 pkgs. Egg Roll Wraps (I like Nasoya)
Extra Virgin Olive Oil
In a cast iron pan, heat a little bit of extra virgin olive oil over med-high heat. Add ground turkey, sprinkle with salt and pepper and brown, stirring to crumble. Add onion and ginger, sauté a few minutes. Add in Garlic and sauté a couple of minutes. Stir in Carrots, Celery and Cabbage. Add pepper and Tamari (or soy sauce), stir. Place lid on pan and reduce heat to med-low or low. Stir often, cooking until veggies are at preferred tenderness. Adjust seasonings.
Preheat oven to 425.
Prepare your work surface by cutting one corner off of your whole stack of egg roll wrappers, setting a tiny dish with little water in it nearby. Scoop about 2 Tbsp. turkey mixture into center of wrapper. With "cut" corner facing you, fold in sides. Using your fingers, dab a little water on the top corner and fold it down over the roll to seal. Place roll on a parchment paper lined baking sheet. Continue until you have used up all your filling or egg rolls.
Place a 1 tsp. Extra virgin olive oil in a tiny dish. Using your fingers, gently rub a small amount of oil over the top of each roll. Bake for 18 minutes.
Serve with sauce. Great with some simple rice and/or salad with ginger dressing!
DIPPING SAUCE:
For every 2 people, mix together the following and separate into 2 small dishes:
3 Tbsp. Soy Sauce (I prefer low sodium Tamari)
1 1/2 Tbsp. rice vinegar (I actually prefer to use Organic Apple Cider Vinegar)
1/2 Tbsp. dark sesame oil
1/2 Tbsp. minced fresh ginger
1 thinly sliced green onion (optional)
NOTE: Any leftover turkey mixture is really tasty thrown onto a salad! :)
