Struesel Coffee Cake

This is a combination of two great recipes. The cake part comes from GIMMESOMEOVEN (Sour Cream Coffee Cake) and the struesel part comes from The Pioneer Woman (The Best Coffee Cake. Ever.). The only changes I made were less butter and sugar in the topping.

Cake: 1/2 C. (1 stick butter), room temperature

1 C. sugar

2 Eggs

2 C. Flour

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

12oz sour cream

1 tsp vanilla extract

Struesel:

1 Stick butter, softened

2/4 C. Flour

1 C. packed brown sugar

2 Tbsp. cinnamon

1 to 1 1/2 C. chopped Pecans

Heat oven to 350.

In a mixer, combine butter and sugar and beat well. Add eggs, one at a time, beating well after each addition, add vanilla. In a separate bowl, combine flour, soda, powder and salt with a whisk. Alternately add dry ingredients and sour cream to butter mixture while mixing on low. Mix until combined.

In the bowl you mixed the flour up in, mix together all Struesel ingredients.

Spread 1/2 of batter into lightly buttered 9 x 13 pan. Spread 1/2 of struesel over all. Dollop and smear remaining batter over top of struesel (this will be fun, and challenging) ;) Sprinkle top with remaining streusel mixture.

Bake 30-40 minutes or until it test done with a toothpick.
