Low Carb Meatballs

Makes approx. 30 meatballs

These meatballs are quick and easy to come together, tender and juicy and so full of flavor! Meatballs have so many wonderful uses, from main dish Italian to appetizers and soups.

1/2 medium onion GRATED...don't mince or dice or chop... you want to grate the onion into a medium bowl to get the best, soft juiciest onion slush. ;)

2 Low Carb Buns

1 egg

2 garlic cloves (minced pressed in a garlic press)

1 tsp. worchestershire sauce (optional)

1/2 C. shredded parmesan cheese

1 tsp. kosher or sea salt

1/4 tsp. fresh ground pepper

1 tsp. dried basil

1 tsp. dried oregano

1/4 tsp. dried thyme

3 Tbsp. dried parsley

1/2 lb ground pork

1/2 lb ground beef

Preheat oven to 375. Line a large baking sheet with parchment paper.

In a medium/large bowl, grate the onion, do this over the bowl to keep the juices! Crumble up low carb buns into the onion and mix with a fork or your fingers until it's all very wet. Whisk in egg and mix it all together well. Let is sit for 5 minutes to soften up the bread crumbs.

Mix in remaining seasonings, stir to combine. Add beef and pork last and mix gently, using your fingers. You want all the flavors to mix together, but don't overwork the meat in order to keep it tender.

Use a 1 1/2 inch cookie scoop to scoop balls of meat onto the parchment paper, just plop them all over there. :) Then roll each dollop in your hands to form a nice round ball. Bake for 18 minutes. There ya go! Now you have delicious meatballs to use in any recipe that calls for them!
