Low Carb Cauliflower"Potato" Salad

1 head cauliflower, florets cut into bite size pieces (size that you would normally cut potatoes for potato salad)

2/3 C. Mayo (I use this Avocado Oil Mayo)

1-2 Tbsp. prepared Yellow Mustard (depending on your preference, I like mine mustardy) ;)

1 Tbsp. Apple Cider Vinegar

1/2 tsp. garlic powder

1/2 tsp. paprika

1/2 tsp. fine grain Himalayan pink salt

1/4 tsp. fresh ground pepper

1/3 c. finely diced red onion

1/3 c. finely diced red bell pepper (or orange or yellow)

1/4 c. finely diced dill pickles

2 large hard boiled eggs (finely chopped)

Prepare a large bowl of ice water, set aside.

Steam cauliflower bites JUST until crisp tender. Immediately immerse cauliflower into ice water and allow it to fully cool as you prepare the dressing.

In a medium bowl, whisk together Mayo, mustard, vinegar, spices and salt and pepper, taste, adjust seasonings as desired. Stir in onion, bell pepper, pickles and eggs. Drain cauliflower and add to the bowl, gently to combine. Chill until ready to serve.
