Serves 3-4
PREP TIPS:
*I prefer to remove the casing from the sausage before cutting into bite size pieces. Simply slice through the casing all the way around the sausage, lengthwise and peel away the casing.
*Plan ahead, make extra chicken earlier in the week and refrigerate or freeze it for this dish. I just season breasts with salt and pepper, brown them and cook through.
*I cook my pasta ahead of time, toss it into a ziploc bag with olive oil and chill.
INGREDIENTS:
Extra Virgin Olive Oil
2 links Sausage - fully cooked and cut into bite size pieces, this is the one I like, Roasted Garlic Sausage
1 Chicken Breast - seasoned and cooked, cut into bite size pieces
2 small or 1 medium Lobster (cut into bite size pieces), or 10-15 shrimp if preferred
1 Cup cooked and chilled pasta. I use this one, Einkorn Penne
1 small sweet yellow onion, thin sliced
1/2 green bell pepper and 1/2 red bell pepper, chopped
2-3 cups frozen (defrosted) broccoli florets
3-4 Garlic cloves, minced
Fresh ground Salt and Pepper, to taste
1 Tbsp. Italian Seasoning
METHOD:
In a large cast iron pan, heat 3 Tbsp. Olive Oil over med to med-high heat. Add Pasta and stir fry until you get some nice browned crispy pieces. This may take a few minutes, stir often. Once the pasta is nicely browned, toss in the onions and peppers and stir fry over medium heat for a couple of minutes, toss in your lobster or shrimp and stir fry a few minutes, then toss in your chicken and sausage, stirring it all together, add a drizzle more oil if needed. Reduce heat if needed. Season the dish with a bit of salt, pepper and Itlaian Seasoning, stir well. Toss in the broccoli and cook, stirring often to heat through. Make a well in the center of the pan and add the garlic, allow it to sit there just a moment until fragrant and then stir into the dish. Heat just a minute more and turn off heat. Serve! This dish needs no "side"... enjoy!
