Breakfast Sausage

These breakfast sausage patties are so delicious, juicy and full of flavor! The best thing is you know exactly what's in them and it's all good for you!

This recipe makes about 2 dozen small/medium sized patties. These can be frozen ahead and cooked as needed.

NOTE: Allow frozen patties to defrost a little bit before cooking. Placing a frozen pattie in hot oil is a recipe for disaster!!! Please be careful.

What you’ll need:

1 lb. ground pork (local farm raised is the best choice here!)

1 lb. ground turkey breast (my preference, but you can use dark meat too)

1 tsp. ground ginger

1 1/2 tsp. fine Himalayan Pink Salt

2 Tbsp. dried Sage

1/4-1/2 tsp. ground Cayenne

3/4 tsp. fresh ground Pepper

1 1/2 Tbsp. Maple Syrup (the real stuff)

Dash Hickory Smoke seasoning OR 1/4 tsp. smoked Paprika

3/4 tsp. garlic powder

1/2 tsp. dried thyme

1/2 tsp. dried coriander

1 tsp. dried oregano

Fat of choice for frying patties (I prefer a tasty bacon fat)

Method:

Gently combine both meats together with your hands, use gentle pressure, just until combined. Sprinkle all spices over meat and gently mix with hands until incorporated.

TO FREEZE: Form into patties of desired size on wax paper, on a large baking sheet. I like to use a 2 cookie scoop to help make this quick and easy...simply scoop balls onto the wax paper, then flatten with fingers. Find a flat platter or pan that will fit into your freezer for "flash freezing". Stack layers of patties between sheets of wax paper and place in freezer for 30 minutes until just set. Place in freezer safe ziploc bag (keeping wax paper between patties). Pull out and cook as needed.

FOR COOKING NOW: Heat a heavy skillet (I prefer Cast Iron) over med to med-high heat, add a little cooking fat (Avocado oil, bacon grease, butter...etc...). Slowly brown on both sides until beautifully golden and cooked through.

These are delightful served up alongside a nice stack of homemade pancakes, french toast or eggs… or maybe you want to crumble this up and make an egg casserole… or make some flaky homemade biscuits and top with cheese, one cooked egg and a juicy biscuit! Oh yum.. .I’m getting hungry just typing this!
