Killer Red Sauce Chicken Tacos

3-4 lbs boneless/skinless chicken breasts

1 can diced tomatoes with green chiles, or adobo, or chipotle... your favorite choice! :)

1/4 C. chili powder

1 Tbsp. cumin

4-5 cloves of garlic, mashed and peeled

2 Tbsp. lime juice

1 Tbsp. chopped seeded jalapeno pepper (optional)

1 tsp. salt

1 tsp. oregano

1/2 tsp. basil

Place all ingredients in Instant Pot, stir to combine. Set to poultry, 35 minutes. Allow to natural release for 10 minutes, then release steam and open lid. Using two forks, shred chicken and add back into sauce, stir to coat and allow to stay heated for a while to fully absorb flavors.
