2 chicken breast (cut bite size)
2 c. broccoli florets
1 cup jasmine rice
3/4 tsp. kosher salt
pepper
1/4 tsp. smoked paprika
2 cups chicken broth
1 cup 1/2 n 1/2 or HWC (or coconut cream)
2 c. shredded cheese
4 oz cream cheese
3 garlic cloves
1 small onion, diced
2 Tbsp. butter
1/4 c. flour
Saute and pan steam broccoli quickly, remove to a bowl.
Add chicken to hot pan with salt and pepper, brown, remove to bowl with broccoli.
Add onion and garlic to pan with 2 Tbsp. butter. Saute 1-2 minutes. Add flour to make a roux. Add liquid (all). Stir in cream cheese.
Add rice and stir. Stir in chicken ad broccoli, stir in cheese. Cover and bake at 375 for 35 minutes. Uncover and bake 5-10 minutes more.
