Makes 10, 4 inch pancakes

NOTE: This recipe calls for Kefir which is a wonderful healthy probiotic! However, if you'd rather avoid those carbs, make buttermilk by adding 1/2 a Tbsp. lemon juice to 1/2 C. heavy whipping cream)
Ingredients:
WET:
4 oz cream cheese (softened)
4 eggs (room temp is good)
1 tsp. vanilla
4 Tbsp. Kefir (or milk of choice)
DRY:
4 Tbsp. coconut flour (sift it!)
2 1/2 Tbsp. arrowroot flour
1 1/2 Tbsp. Lakanto powdered sweetener (OR 2-3 Tbsp. powdered swerve)
2 tsp. baking powder
1 1/2 Tbsp. vanilla (or plain) egg white protein powder (I prefer Jay Robb brand)
1 Tbsp. collagen OR gelatin powder
1/4 tsp. xantham gum
1 Tbsp. oat fiber
pinch of stevia powder OR 3 drops liquid stevia
pinch of salt
**Additional nut milk as needed to achieve desired consistency
Preheat griddle to 300, I like to cook my bacon first and leave a thin layer of bacon grease to cook my pancakes in, however, you can add whatever fat you prefer to the griddle at this time.
Using an electric whisk, beat all the "wet" ingredients until smooth, thick and creamy. In a separate bowl, whisk together all dry ingredients. Add dry to wet and stir to incorporate with a small rubber spatula and beat by hand to mix well. Allow mixture to sit a couple of minutes to thicken. IF needed, add a little nut milk 1 Tbsp. at a time until a slightly thick buy scoop-able consistency is acquired. You don't want the batter to be too thick (cookie dough!), or too thin (milky!). Somewhere in between so the pancakes can be spread with the back of the spoon and will hold their shape nicely on the griddle. Thicker than normal pancake batter.
Scoop about 1/4 c. batter onto griddle and spread gently to form a 4 inch pancake... repeat until griddle is full. Allow bubbles to appear and pop (as with regular pancakes) and flip when bottoms are golden brown. Repeat with remaining batter.
NOTE: I like to keep my pancakes warm on top of my cooked bacon in the toaster oven. ;)
Serving suggestions:
I like to warm up some Lakanto maple syrup with a little butter melted into it. I also love heating up frozen berries then adding finely ground chia seeds to form a jam, and...yes, I also love to add toasted pecan chips and a dollop of whipped cream! :)
