Low Carb Sandwich Buns

I love this recipe it's so incredibly easy, quick and versatile! I originally used this recipe for Low Carb Hamburger Buns from the Low Carb Maven, however I've made a few changes that I wanted to note here.

1 1/2 c. shredded part skim mozzarella cheese

2 oz cream cheese

2 eggs

2 Tbsp. Coconut Flour

3/4 C. Almond Flour (or other nut flour)

2 Tbsp. Flax Meal (fine)

2 Tbsp. Oat flour (optional)

1 Tbsp. Baking Powder

Pinch salt

1 Tbsp. Gelatin Powder

1 Tbsp. Nutritional Yeast Flakes (optional)

Dash Stevia powder - This is what I use. Optional, but leave out for "french bread"

1. In a medium bowl, combine all your dry ingredients with a whisk, set aside. Lay out a piece of plastic wrap on your counter, as you'll want to work quickly with the "dough".

2. In a medium/large microwave safe bowl, heat mozzarella and cream cheese for 1 minute, stir. Heat for another 30 seconds until melty, and stir vigorously with a fork to combine. Add eggs and stir vigorously until smoothe. Add in dry ingredients and mix together. At this point you may need to use your hands to mix it in well. The "dough" will be quite sticky, don't worry, it's ok. :)

3. Scrape it out of the bowl onto the plastic wrap and flatten slightly, wrap plastic up around it and place in freezer while oven preheats. Turn on oven to 400.

4. Once oven is ready, remove the "dough". Form into 4 hamburger bun shapes (they won't rise a lot, so don't flatten too much). Bake on a parchment paper covered baking sheet for 12 minutes or until lightly browned. Allow to cool for a few minutes on baking sheet before removing to cooling rack.

5. Keep in a storage bag at room temperature for 2-3 days, after that store in the fridge for up to a week. They also freeze nicely!

OPTIONAL IDEAS:

1. Add in garlic powder and Italian seasonings with dry ingredients. Instead of shaping buns, flatten into a rectangle and cut into 6 flat style panini buns. These are great for a thin, hot sandwich on the grill!

2. Instead of shaping into buns, shape into a "french bread" type log. Be sure to not add sweetener to this dough. Make three slices in the top of loaf and bake as usual. serve as french bread with dinner.

3. Slice up pieces of "french bread" and toast for dipping in guacamole, salsa, or for bruschetta!

4. These buns are equally as delicious toasted with butter and jam!
