Balsamic Red Wine Chicken - Instant Pot


2-4 Chicken Breasts (boneless skinless, cut into large chunks)Olive Oil

Kosher Salt

Fresh Ground pepper

large handful chopped or sliced onion

3-4 minced garlic cloves

1 14 oz can fire roasted tomatoes

1/3 C. (plus) balsamic vinegar

1/3 C. (plus) sweet red wine

1 tsp. dried basil

veggies of your choice roughly chopped (I like a variety of carrots, cauliflower, broccoli, bell peppers...)

(optional) 2 medium potatoes, peeled and chopped into large bite size chunks

Heat on "Saute", add a drizzle of oil when "hot". Brown chicken on both sides, remove to bowl. Add onion and garlic, saute a few minutes, stirring frequently. Add wine and vinegar to deglaze pot. Add remaining ingredients, including chicken, stir it up.

Put on lid and change to "Poultry", I set it for 20 minutes to ensure the potatoes were cooked through.

OPTIONS: You can omit the potatoes, this is good with pasta as well, or just as is, maybe some bread. ;)
