Casserole
Extra Virgin Olive Oil
Kosher Salt
Fresh Ground Pepper
3 boneless, skinless chicken breast halves, cut in 2-3 pieces
1 small onion, chopped
3 minced garlic cloves
1/2 of a red bell pepper, chopped
3 C. low fat/low salt chicken broth
1/2 C. milk
1/2 block 1/3 less fat cream cheese, cut in chunks
1/2 C. shredded sharp cheddar
1 C. brown Basmati or Jasmine Rice
A whole lot of broccoli florets
Topping
1 1/2 C. crushed Kashi brand Roasted Garlic crackers (they look like triscuits)
1/3 C. shredded parmesan cheese
2 Tbsp. melted butter
Preheat oven to 375.
Trim chicken, rinse and pat dry with paper towels; sprinkle with salt and pepper.
In a large lidded, OVEN SAFE, heat a little olive oil on Med-High Brown chicken 2 minutes on each side, then remove from pan and keep warm.
Add a drizzle more olive oil to pan; add onion and garlic, saute until soft. Add bell pepper, saute 2 minutes.
Add broth and milk, reduce heat to just a very slow simmer. A little at a time, and cheeses, stirring until melted. Add rice and broccoli, stir. Return chicken to pan and cover. Place pan in oven and bake 1 hr at 375, stir. Replace lid, and bake 30 more minutes.
In a small bowl, mix crushed crackers, parmesan cheese and melted butter. Remove lid and sprinkle topping over casserole...bake UNcovered for 5-7 minutes.
