BBQ Turkey Meatloaf
Make 1 batch of Best BBQ Sauce Ever!
1 lb. Ground Turkey Breast
1/2 C. Chopped Sweet Yellow Onion
1/2 C. Chopped Green Bell Pepper
1/4 C. Chopped Roasted Red Bell Pepper (bottled)
1/2 tsp. Smoked Paprika
1/2 tsp. garlic powder
1/2 tsp. dried basil
1/2 tsp. dried oregano
1 egg (lightly beaten)
1/2 - 3/4 C. Rolled Oats
2 tsp. Extra Virgin Olive Oil (if using only breast meat)
1 batch of Best BBQ Sauce Ever! (recipe link above)
Preheat oven to 475. Oil a ceramic loaf pan.
In a large bowl, combine Turkey through Olive Oil (if using), add 1/2-3/4 C. Best BBQ Sauce Ever! (as needed). Mix gently with fingers, to avoid making meat tough.
Pat into oiled loaf pan, rounding top slightly with fingers. Cover remaining BBQ Sauce, and set aside.
Bake, uncovered, 45 minutes. Remove from oven and coat top of meatloaf with a nice thick layer of the remaining BBQ sauce. Return to oven and bake 15 minutes longer.
Remove from oven and let sit 10 minutes before slicing. Serve with a drizzle of BBQ Sauce.
Delicious served alongside mashed potatos and steamed broccoli!
