Low Carb Snowball Cookies

I based this recipe off a few recipes I've found around the web, I worked a few different ideas together to come up with what I believe is the perfect snowball cookie. :) Low Carb deliciousness and all my "normal" friends love them too! ha ha!

NOTES: I know it may seem odd to have so many different sweeteners listed (actually on three here, you should see my Chocolate Cream Pie!, lol)...but they balance eachother out. One cuts the bitter, the other cuts the "cooling" and it all comes together perfectly. :)

Ingredients:

For Cookies:

9 Tbsp. unsalted butter, softened to room temp

2 tsp. pure vanilla extract

1/2 - 2/3 C. swerve confectioners Sweetener (it really depends on your own sweet level)

1/2 Tbsp. SweetLeaf Organic Stevia Powder (shaker bottle)

10 drops monkfruit extract

1 1/2 C. Almond Flour, blanched

1 Cup pecans, toasted

1/3 C. Whey protein powder Isolate

1/2 tsp. Xantham Gum

1/4 tsp. fine salt

For dusting:

1/2 C. Swerve Confectioners Sweetener

1/8 tsp. Organic SweetLeaf Stevia Powder

In a mixer beat butter until smooth. Add in vanilla and swerve confectioners, organic stevia powder and monkfruit drops, beat until light and fluffy.

Meanwhile, using either a high speed blender (notably more difficult) or a food processor (I don't have one), combine Almond Flour, Pecans, Whey Protein Powder, Xantham gum and Salt. Process until it's well ground and mixed together. Note: With a blender you'll need to dig around and shake it around. ;)

Add dry ingredients to butter mixture and mix on low just until combined. Pinch off a piece of the dough and taste, if you need more sweetener, sift it over and mix to combine.

Using a 1 inch cookie scoop, roll balls and place in a bowl, cover and chill 30 minutes. In a small bowl, sift together the "dusting" sweeteners, set aside.

Preheat oven to 350. Place cookie balls on parchment lined cookie sheet. Bake 15 minutes or until golden on top and edges. Immediately after removing from oven, sift a small amount of the "dusting sweetener" over the tops of the cookies. Allow to cool completely on the cookie sheet. Once cool, dip or roll in the remaining dusting sweetener and plop into a large ziploc bag, if you have any dusting sweetener left, sprinkle it into the bag and roll them around. ;) YUM!!!!
