This recipe makes 2 loaves. I usually change up the type and amount of sugars, as well as the types of flours.
3 1/2 C. Flour (I mix this up, using whole white wheat, flax meal, oat flour, ground walnuts, white flour, etc...)
2 tsp. baking soda
2 tsp. baking powder
1 1/4 tsp. salt
1 tsp. cloves
1 tsp. nutmeg
1 tsp cinnamon
1/4 tsp Allspice
(throw some pumpkin pie spice in there and some nutmeg too!)
3/4 C. packed brown sugar
3/4 C. sugar (I use coconut sugar!)
1/2 C. applesauce
1/4 C. extra virgin coconut oil
4 eggs
2 C. Pumpkin puree
Heat oven to 350.
In medium bowl, whisk together flour, soda, powder, salt and spices.
In a mixer, beat together butter, applesauce, oil and both sugars until well mixed. Add eggs, one at a time, beating well after each addition. Mix in pumpkin. Add dry ingredients and stir together, just until combined. Spread evenly into TWO lightly buttered bread pans.
Bake 50-60 minutes (if it needs to bake any longer, tent lightly with foil), or until tests clean with toothpick. Cool 10 minutes on rack, remove from pans and cool completely.
